What are Scotcheroos?

Scotcheroos are peanut butter Rice Krispie treats topped with melted chocolate and butterscotch chips. They are “no bake”, which means the only cooking is done on the stove top!

Common ingredients for Scotcheroos include: sugar, light corn syrup, peanut butter, Rice Krispies cereal, chocolate chips and butterscotch chips.

Scotcheroos are soft and chewy, and are always popular at parties and potlucks!

How do you make these No Bake Scotcheroo Bars?

One of the best things about Scotcheroos is how easy they are to make!

Start by combining sugar and corn syrup in a saucepan over medium heat.

Continue whisking the sugar and corn syrup until the sugar dissolves and the mixture starts to boil. Remove the saucepan from heat as soon as it starts boiling so you don’t over-boil and cause your Scotcheroos to be too hard or crunchy.

Whisk in peanut butter until smooth. This mixture will start setting up pretty quickly, so act fast!

Pour the peanut butter mixture over Rice Krispies and gently fold until well combined.

Press the cereal mixture into a 9×13-inch pan sprayed with nonstick cooking spray or lined with waxed or parchment paper then set aside.

Add chocolate and butterscotch chips to a microwave-safe bowl and microwave for a few minutes until melted.

Spread chocolate and butterscotch mixture on top of the cereal mixture and let sit until firm.

If you used waxed or parchment paper, life it from the pan and cut on a flat surface. These can be a little difficult to cut through sometimes so that can help!

How do you store Scotcheroo Bars?

  • Scotcheroos can definitely be made ahead of time, but be sure to cover them in an airtight container and leave them on the counter.
  • If you are wanting to freeze your Scotcheroos, prepare according to the recipe, cut into squares and place inside freezer bags. Let thaw completely before eating them.

Ingredients

  • 6 cups Rice Krispies Cereal
  • 1 cup sugar
  • 1 cup light corn syrup
  • cups creamy peanut butter
  • 1 cup milk chocolate chips
  • 1 cup butterscotch chips

Instructions

  • Place Rice Krispies cereal into a large mixing bowl; set aside.

  • Combine sugar and corn syrup in a saucepan over medium heat. Stir frequently until sugar dissolves and mixture begins to boil.

  • Remove from heat as soon as it starts to boil and mix in peanut butter until well combined.

  • Pour peanut butter mixture over cereal and gently stir until well coated.

  • Press cereal mixture into a 9 x 13 inch pan sprayed with cooking spray or lined with parchment or waxed paper; set aside.

  • Combine chocolate and butterscotch chips together in a microwave-safe bowl.

  • Microwave for 2 minutes then stir until smooth.

  • Spread in an even layer over cereal mixture.

  • Let cool until firm.

  • Cut into bars and serve.

    My mother made the no bake scotcheroos at least 45 years ago. I have carried on the tradition through my adult life. We thought my mother got the recipe off of the Rice Krispies b ox, but was not sure. They are delicious. I only use 1cup of peanut butter and use semi-sweet morsels.

    These are a family favorite! We've been making them for years. If we need the chocolate/ butterscotch layer done quickly we would pop them in the freezer for a short amount of time.

    I grew up on these too and love them! My poor husband loves to bake but has made these for me 2 or 3 times and can never get them to turn out right. Maybe I'll give him your recipe and see if it's any easier than the one I have!

    I make these all the time for family functions. They are my go-to potluck dessert! I use 1 cup peanut butter, 2 cups milk chocolate and 1 cup butterscotch morsels. One trick I use to press the rice krispie mixture in thenpan is to put my hand in a zip-loc type sandwich bag and spray with cooking spray. That makes ip super easy and less messy to get the mixture in the pan! I also let mine set up overnight because there is no way they would be ready in an hour, maybe if I used less chocolate they would be.

    Hi Misty, sorry they didn't turn out very well for you. You only cook on the stove top til it just barely starts to boil. Don't add any extra rice krispies because that could make them dry. You don't want to under measure the karo syrup or peanut butter because that gives the recipe a little more moisture. Hope some of these tips help. You could even decrease the rice krispies by 1/2 cup.

    I LOVE these! One thing I do is actually melt the butterscotch for 30 seconds first, then add the chocolate chips because butterscotch takes longer to melt than chocolate. :)

    Love Scotcheroos! Definitely stick with the original recipe though on the peanut butter. The original recipe calls for 1 cup of peanut butter, not 1.5. I didn't realize this only until after I made these and wondered why they were so much drier and a little tougher than what I remembered. My mom also always used 1 bag of chocolate chips and one bag of butterscotch chips to give a thicker chocolate layer and its so good!

    Gotta try this. Great recipe. BTW--I'm the eldest of 6 sisters. It's a lot of fun! We have 4 brothers, also! By the 4th pregnancy Mama was wondering if she would ever be NOT pregnant. LOL!

    Yum!! My gma taught me a form of this except it only needs 1 cup of peanut butter and a bag of the butterscotch chips melted together, then add the 6 cups of krispies, stir it up, press in buttered pan, refrigerate to set and done. She called them peanutbutter scotchies. I may have to try adding chocolate on it ?

    I have been making them for years. My last step, when finished was to cut them into pieces before letting them set up. It made them much easier to get thru later!

    Just made these bars and they look soon good I can't wait to dig in! They are currently "setting" and I was wondering if I'm supposed to refrigerate them since I will be bringing them over to my sisters this weekend, or do I just leave them out on the counter (covered of course).

    You probably let your sugar syrup mixture boil too long. I take it off the heat as soon as it just comes to a boil otherwise they will be hard.

    They are NOT nasty if you use just milk chocolate chips. I have made them both ways. My family always prefers just milk chocolate chips. Different people like different things.
