The apple fritter donut is a favorite, classic donut loved by many and it’s easy to make low carb without using apples!
These keto apple fritters should be called zucchini fritters because we use zucchini place of apples in order to cut down on the net carbs; although, chayote squash can be used as well.
To give these keto donuts an apple flavor, we use a concentrated apple extract mixed with lemon juice and cinnamon to mimic a crisp granny smith apple. This method works well for making keto apple pie too!
These keto apple fritters are delicious topped with the creamy glaze or even with melted butter on top. It makes for a tasty breakfast with a hot cup of coffee.

How to make keto apple fritters
- Make “keto apples”– Toss diced zucchini or chayote with cinnamon, lemon juice and apple flavoring.
- Assemble fritter dough – Combine almond flour, protein powder, sweetener, baking powder, xanthan gum and salt. Then mix in nut milk, sour cream, water and an egg.
- Fold in “keto apples” – stir to combine.
- Fry the donuts in lard or avocado oil over medium heat.
- Let cool, then drizzle cream glaze over the fritters.

Keto Apple Fritters Ingredients
- 1 zucchini, peeled and finely diced
- 1 teaspoon cinnamon
- 2 teaspoons lemon juice
- 1/4 - 1/2 teaspoon apple flavoring
- 2 cup almond flour
- 1/2 c unflavored or vanilla protein powder
- 3 tablespoons monkfruit sweetener or sweetener of choice
- 2 1/2 teaspoons baking powder
- 2 teaspoon xanthan gum
- 1 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup unsweetened macadamia nut milk or other nut milk
- 1/4 cup sour cream
- 1/4 cup water
- 1 egg
- lard, for frying
Glaze Ingredients
- 1/2 cup confectioners Swerve or use sweetener of choice
- 2 tablespoons heavy whipping cream
- 2 teaspoons vanilla extract

Get a small bowl
In a small bowl, add finely diced zucchini, cinnamon, lemon juice and apple flavoring. Add more or less apple flavoring to taste. Mix and set aside.

- 1/4 - 1/2 teaspoon apple flavoring

Dry ingredients
Add the dry ingredients to a medium bowl. Mix until combined.

- 1 teaspoons xanthan gum

Mix it
Mix in wet ingredients.

- 1/2 cup unsalted butter, melted
- 1/2 cup nut milk
- 1/4 cup sour cream
- 1/4 cup water
- 1 egg

Zucchini in
Fold in apple flavored zucchini mixture.

Lard & skillet
Add lard to a small non-stick skillet and heat to medium heat. Add enough lard to cover the donut almost halfway. Scoop about a 1/4 cup of the apple fritter donut into the skillet. Can swirl the oil in the pan to help coat the donuts as they cook. Flip once golden brown on the bottom (about 3-5 minutes) and fry the other side until golden brown.

Cool down
Remove from skillet and place paper towel or wire rack to cool.

Glaze
To make the apple fritter glaze, add confectioner's Swerve, heavy cream and vanilla to a small bowl. Mix to combine. Microwave for 20 seconds to get a thin consistency if needed.

- 2 tablespoons heavy cream
- 2 teaspoon vanilla extract

Drizzle it
Drizzle or dip the top of your apple fritter donut into the glaze and place on a wire rack to set.

Zucchini in place of apple for low carb recipes
Zucchini is used in the place of apples in many keto recipes because it has a neutral flavor while imparting a similar texture and appearance to an apple. The neutral flavor allows you to manipulate it by adding apple flavor extracts to yield an delicious apple taste in this keto apple fritter but without all of the carbs.
If you absolutely don’t want to use zucchini in place of apples in this recipe, you can probably get away with using an apple in this recipe. Just make sure you adjust the macros.

There are many types of apple flavoring and extracts to choose from. My favorite is the flavor from a granny smith. These flavors are the closest to traditional apple fritters which use granny smith apples. I have also Fuji apple flavoring too.

One of the main ingredients in this apple fritter recipe and the secret to fluffy keto donuts is the protein powder. It helps these donuts to from structure, provide flavor and helps them rise. You can use whey protein powder or a vegan protein powder.

This recipe for these gluten free apple fritters makes 18 donuts! Unless you are having a party, there is no way you can eat all of those keto donuts in one setting.
For leftover fritters, I recommend you store them in a paper bag at room temperature. This will help keep them crunchy on the outside and soft on the inside.

Can coconut flour be substituted for almond flour in this fritter recipe?
Although I haven't tried it so I can't guarantee results. Generally a smaller amount of coconut flour can be substituted for almond flour. A common ratio is 1/4 cup coconut flour for every cup of almond flour.

Hello! Video shows to add 1/4 cup water, but not seeing it in printed recipe. New to keto baking so needing direction on whether to add water or not. Love all the recipes I’ve tried so far. Thanks!

Not sure what I did wrong, but they did not hold together. At all.
The only change I made was 2% milk for nut milk. I ended up with a lot of what looked like piles of fried bread crumbs. 🥺🥺Reply

I’m sorry they didn’t turn out for you. The reason why is that your oil was too hot. When you cook them, if you start to notice they are disintegrating when frying, the oil is way too hot. Lower it down and try again. Hope that helps.
