A must-try weeknight dinner idea that is healthy, delicious, and takes less than 30 minutes.
I promise you will have tender beef every single time with a few simple tips.
I am using Shanghai Noodles today to make Beef and Broccoli Noodles.
You can find Shanghai Noodles at T&T Supermarket, but you can also use other noodles you like.
Some noodles that I recommend are Yellow stir-fry noodles or udon noodles.
Cook the noodles based on instruction, rinse with cold water and set aside.
If you use frozen udon, pour hot water over it and let it side for 5 minutes. Drain and rinse with cold water before stir-fry.
You will need soy sauce, oyster sauce, rice vinegar, ketchup, minced garlic, black pepper, and sugar for the delicious restaurant-quality Beef and Broccoli Noodles Glaze.
The secret is ketchup, as it provides the perfect acidity and sweetness for the sauce.
I am doing the classic stir-fry with broccoli, but you can also add in other vegetables of your choice. I’ve made Beef and Broccoli Noodles stir-fry with baby corn, red pepper, carrots, cabbage, and green pepper before, and it tasted amazing!
Here are a few secrets to SUPER TENDER Beef and Broccoli Noodles every single time!
- The first one is baking soda.
I got this secret from a good friend who works at a Chinese restaurant; it is honestly a game-changer. No more eating tough beef at home, and hello to juicy, tender, silky beef!
- The second tip is cutting against the grain and diagonally.
Always cut against the grain and sideways to get thin slices. With this tip, it doesn’t matter what type of steak you get; it will turn out perfect every time!
- The final tip is to freeze the beef for 10 minutes before slicing it. This step will make it 100x easier to cut the meat.

Ingredient List:
- 1.5 lb of Beef
- 1.5 tsp of Black Pepper
- 2 tbsp of Oyster Sauce
- 1 tsp of Baking Soda
- 3 tbsp of Corn Starch
- 2 tbsp of Oil
- 2 cups of Broccoli
- 450g of Noodles
Sauce:
- 3 tbsp of Oyster Sauce
- 2 tbsp of Soy Sauce
- 1 tbsp of Rice Vinegar
- 2.5 tbsp of Minced Garlic
- 0.5 tbsp of Black Pepper
- 1 tbsp of Sugar
- 2 tbsp of Ketchup
- Thinly slice up the beef based on the above tips and marinate the beef with 1.5 tsp of Black Pepper, 2 tbsp of Oyster Sauce, 1 tsp of Baking Soda, 2 tbsp of Oil, and 3 tbsp of Corn Starch. Let it rest for 10 minutes while you prepare the rest of the ingredients.
- Mix oyster sauce, soy sauce, rice vinegar, minced garlic, black pepper, sugar, and ketchup in a bowl.
- Cook noodle as per instruction, drain and set aside.
- Blanch, the Broccoli with Hot Water, drain, and set aside.
- In a pan, drizzle in oil and turn the heat up to medium-high. Once the pan is hot, add the beef and let it sit for 30 seconds before sauteing for 2-3 minutes.
- Add in the broccoli, saute for 1 minute.
- Finally, add the noodle, drizzle in the sauce, and saute on high heat for 2-3 minutes.
